Lentil salad
Ingredients:
3 cups of cooked lentils
1 cucumber
3 tomatoes
1-2 avocados
Handful of cilantro
1-2 limes
Salt, pepper and garlic powder to taste
1 tsp apple cider vinegar
1tbsp of balsamic vinegar
*to add more protein you can add tofu

Directions:
•Chop all the vegetables
•Mix chopped vegetables with cooked lentils
•Squeeze the lime juice into a container, add the apple cider vinegar and balsamic vinegar
•Add the salt, pepper and garlic powder into the liquid mix and mix all together
•Pour liquid mix into the lentils and vegetables
*For extra protein, dice 12 oz of firm tofu and add into the bowl.
